The aim of this manual by Dr. Giuseppe De Giovanni - who was manager of the Ministry of the Industry, General Direction Production Development and Competitiveness at the time of publication - is that of providing the sector's operators and the controlling bodies with a useful tool, based also on the most common questions coming from the enterprises regarding the application of the new dispositions concerning the production and marketing of alimentary pastas established by the RPD no. 187/2001.
The manual is a benchmark operating instrument to comply to the duties established by the law concerning food hygiene, as per the Leg. Dec of May 26th, 1997, no. 155, including the adoption of the European directive no. 93/43/CEE on food hygiene by the Italian legal system.
